Besides the apostrophe, it reads:
Today’s special waitress wanted beef tips.
So does the waitress needs the tips of beef? Where would the tip of a piece of beef be?
Oh, I just noticed my fail, saying ‘needs’ instead of ‘need’. Apologies!

I suppose ‘learning impared’ waitresses might yearn for the tip of an iceberg of meat every once in a while.
