I checked the OED to see if “pistacious” was perhaps some obscure or obsolete adjective: no luck. However, the genus for pistachio trees is Pistacia, so theoretically the adjective “pistacious” (or “pistacine”) could be coined based on that. In any case, it doesn’t exonerate the signmaker.
